Bestselling Venison Cookbook Gets First Update in a Decade

St. Paul, Minn. – September 28, 2026 -- James Beard Award-winning author Hank Shaw has released a fully updated edition of his venison cookbook, Buck, Buck, Moose, ten years and more than 100,000 copies after the original launched.

The 336-page hardcover adds 30 new recipes and modern cooking methods

The reboot brings the total recipe count to 125, alongside roughly 200 color photographs and updated guidance for cooking deer, elk, moose, caribou, pronghorn and other antlered game. Shaw said the book needed to change because venison cooking itself has changed over the past decade, drawing on more hunting, cooking and teaching experience since the first edition.

New instructions cover sous vide, air fryers and pressure cookers

Recognizing shifts in how people cook at home, Shaw added guidance throughout for sous vide machines, air fryers, electric pressure cookers and slow cookers. The charcuterie section has been expanded and modernized, chapters reorganized, and the index expanded for easier use.

New recipes span Swedish, British, Mexican and Texas dishes

Additions include Swedish 'frost bump' venison, British game pies, Mexican pacholas and Texas-style hot link sausages, plus more smoked venison dishes and weeknight casseroles.

The edition pushes further into nose-to-tail cooking

When the original Buck, Buck, Moose appeared, nose-to-tail cooking was only beginning to gain acceptance among American hunters. Shaw said that approach has since become mainstream, and the new edition gives readers more ways to use shanks, necks, shoulders and other working cuts rather than defaulting to burger and jerky.

The book carries a $35 retail price and a foreword by Randy Newberg

Buck, Buck, Moose features a foreword by hunter and conservationist Randy Newberg, with endorsements from Sean Sherman, Ree Drummond and Steven Rinella. It is available wherever books are sold in the United States and Canada, distributed in the U.S. by SCB Distributors, with signed copies sold through Shaw's Hunt Gather Cook site. The original edition has drawn nearly 1,500 five-star reviews on Amazon.

Shaw will support the release with book dinners, talks and appearances around the country this fall.
